Spicy Turkey Stew

Number of servings: 6

2 tsp olive oil

1 onion, sliced

1 carrot, sliced

2 celery stalks, sliced

1 red bell pepper, chopped

1 granny smith apple, peeled and diced

¼ cup all purpose flour

1 TBSP curry powder

1 cup chicken broth

½ cup Dorothy Lynch Home Style Dressing

1 large tomato, peeled, seeded and chopped

¼ tsp salt

1/8 tsp black pepper

Pinch of cayenne pepper

2 cups cooked turkey meat, diced

Cooking Instructions:
Heat oil in large saucepan over medium heat. Add onion, carrot, celery, pepper and apple. Cook, stirring often, until softened (about 10 minutes). Sprinkle in flour and curry powder; stir for about 2 more minutes. Gradually stir broth into vegetable mixture. Add Dorothy Lynch Dressing, tomato, salt, pepper and cayenne and bring to a boil. Reduce heat and simmer, covered, for about 30 minutes. Add turkey and cook until heated, about 5 minutes longer.

Notes:
Serve or freeze for the upcoming late fall evenings!
