Approximately 2 lbs. total of beef, pork, and lamb tenderloins Slice tenderloins into 1/4" thick medallions. Arrange in layers in an airtight container. Pour Dorothy Lynch Home Style or Reduced Calorie Dressing over each layer. Cover and marinate in the refrigerator for at least four hours. Remove marinated medallions from container, saving marinade for use in basting. Grill medallions as desired. Lightly baste with marinade as meat cooks. Garnish with peppercorns, if desired. Serves 4-6. (Note: You may substitute any meats of your choice). |
