Chicken Tacos

Chicken breasts (boneless, skinless)
Dorothy Lynch dressing
Flour tortillas
Sour cream
Grated cheese
Shredded lettuce
Diced tomatoes (or pico de gallo)
Diced onions (optional)
Sliced olives (optional)

Cook chicken (poach or boil) and shred with forks. Add dressing while chicken is still warm. Add salt & pepper to taste, if desired. Best if made ahead, refrigerated & then reheated before serving. Put large spoonful of chicken mixture in center of tortilla, add toppings as desired, and roll or fold. These are a huge hit with everyone who tries them, especially with a bunch of hungry college students!
