Ingredients
- 2 lbs. red potatoes, not peeled, cut into chunks
- 3/4 c. Dorothy Lynch Home Style
- 1/4 c. mayonnaise
- 1/2 c. sliced green onions
- 2 T. chopped fresh cilantro
- 1 (15-oz.) can black beans, rinsed and drained
- 1 med. red bell pepper, chopped
- Salt, pepper and taco seasoning to taste

Cooking Instructions
Cover potatoes with water in 4-quart sauce pot; bring to a boil over medium-high heat. Reduce heat and simmer uncovered 10 minutes or until potatoes are tender. Drain. Combine Dorothy Lynch Home Style, mayonnaise, onions and cilantro in large bowl. Add potatoes, black beans and red pepper; toss to coat. Add seasonings to taste. Garnish, if desired, with fresh cilantro. Serve chilled or at room temperature.
Notes:
For a reduced fat version use Dorothy Lynch Light & Lean and reduced fat mayonnaise or lite mayonnaise.
