Dorothys Santa Fe Potato Salad

Ingredients
- 2 lbs. red potatoes, not peeled, cut into chunks
- 3/4 c. Dorothy Lynch Home Style
- 1/4 c. mayonnaise
- 2 T. chopped fresh cilantro
- 1/2 c. sliced green onions
- 1 (15-oz.) can black beans, rinsed and drained
- 1 med. red bell pepper, chopped
- Salt, pepper and taco seasoning to taste
- Prep time: 15 Minutes
- Cook time: 10 Minutes
- Serves: 4
The Method
- Cover potatoes with water in 4-quart sauce pot.
- Bring to a boil over medium-high heat.
- Reduce heat and simmer uncovered 10 minutes or until potatoes are tender.
- Drain.
- Combine Dorothy Lynch Home Style, mayonnaise, onions and cilantro in large bowl.
- Add potatoes, black beans and red pepper; toss to coat.
- Add seasonings to taste.
- Garnish, if desired, with fresh cilantro.
- Serve chilled or at room temperature.
Note: For a reduced fat version use Dorothy Lynch Light & Lean and reduced fat mayonnaise or lite mayonnaise.
