Fajita Baked Breakfast Sliders

Fajita Baked Breakfast Sliders Recipe
Ingredients
  • 2 T. unsalted butter, divided
  • 1/4 c. green bell pepper, chopped
  • 1/4 c. red bell pepper, chopped
  • 1/4 c. red onion, chopped
  • salt and pepper to taste
  • 8 large eggs
  • 1 T. fajita seasoning
  • 1/3 c. sour cream
  • 2 tsp. chipotle adobo sauce
  • 2 T. Dorothy Lynch Dressing & Condiment
  • 12 slider rolls
  • 6 slices cheddar cheese
  • 1 T. garlic powder
  • Prep time: 15 Minutes
  • Cook time: 20 Minutes
  • Serves: 12

The Method

  1. Preheat a large non-stick skillet to medium-high heat.
  2. Add one tablespoon of butter to the skillet along with the veggies, salt, and pepper.
  3. Sauté the veggies until softened (about five minutes).
  4. Next, pour the whisked eggs into the skillet along with the fajita seasoning.
  5. Stir the veggies and whisked eggs together until scrambled.
  6. Once cooked, remove the skillet from the heat and set it aside.
  7. In a small mixing bowl, combine Dorothy Lynch Dressing & Condiment with the chipotle adobo sauce and sour cream.
  8. Set aside.
  9. Spray a 9×13 jelly roll pan with non-stick cooking spray.
  10. Take the bottom of the slider buns and place them onto the pan.
  11. Next, spoon some of the Dorothy Lynch Dressing & Condiment mixture on the buns.
  12. Spoon the egg mixture over the sauce, followed by slices of cheese, and top with a slider bun.
  13. Brush the tops with one tablespoon of melted butter and sprinkle garlic powder on top.
  14. Bake for about 15 to 20 minutes until golden and delicious!
