Grilled Turkey Sliders with Tomato Jam

Two Grilled Turkey Sliders with Tomato Jam and lettuce
Ingredients
  • 8 slider rolls
  • 8 leaves of lettuce
  • 1 lb. ground turkey
  • 2 T. canola oil
  • 1/2 c. onion, chopped
  • 3 sage leaves
  • 1 cubanelle pepper, chopped
  • 1 clove garlic, minced
  • 3 T. buttermilk powder
  • 1/2 c. Dorothy Lynch Home Style
  • 1 lb. plum tomatoes, chopped
  • 3 (1-inch) slices fresh ginger
  • 1/2 c. Dorothy Lynch Home Style
  • 1 T. red wine vinegar
  • 1 tsp. cumin
  • 1/16 tsp. cayenne pepper
  • 5 T. brown sugar
  • 1/2 tsp. salt
  • 1 cinnamon stick
  • 1 tsp. lemon zest
  • Prep time: 20 Minutes
  • Cook time: 1 Hour 15 Minutes
  • Serves: 8

The Method

Sliders:

  1. In a medium skillet, cook the pepper and onion until the onion is translucent.
  2. Add garlic and cook for 3 more minutes on medium heat, then add sage.
  3. Remove from heat and cool.
  4. Mix vegetables with turkey, buttermilk powder, and 1/2 cup of Dorothy Lynch Home Style.
  5. Form into small patties and grill or fry until the internal temperature is 165 degrees.
  6. Place the slider on the roll with a lettuce leaf and top with tomato jam.

Tomato Jam:

  1. Mix tomatoes, ginger, 1/2 cup Dorothy Lynch Home Style, red wine vinegar, cumin, cayenne pepper, brown sugar, salt, cinnamon and lemon zest.
  2. Add to a medium saucepan and bring to a boil over high heat.
  3. Reduce the heat and simmer, stirring occasionally.
  4. Simmer until mixture becomes a jam-like consistency (about 1 hour).
  5. Cool before serving. Store in refrigerator.
