Individual Roasted Pepper and Ham Quiches

Ingredients
- 6 eggs
- 1/4 c. milk
- 5 c. cubed day-old bread
- 1/4 tsp. salt
- 1/4 lb. ham, diced
- 1/4 c. roasted red peppers, diced
- 1/4 c. Dorothy Lynch Home Style
- 8 oz. mozzarella cheese, shredded
- 2 T. butter
- 1/2 T. chives, minced

The Method
- Whisk together eggs, milk, Dorothy Lynch and salt.
- Divide half the bread among 8 ( 4-oz. sized ) greased ramekin dishes or individual baking dishes.
- Top with ham, roasted peppers, half the egg mixture and half the cheese.
- Finish with remaining bread, egg and cheese.
- Spread butter on top of each ramekin dish.
- Refrigerate overnight (optional).
- Bake at 350 degrees until set or about 25 minutes.
- Top with chives.
