Maple-Roasted Brussels Sprouts and Ring Bologna

Ingredients
- 1 lb. Brussels sprouts, stems removed and halved
- 2 tbsp. olive oil
- Salt and pepper
- 14-oz. package ring bologna or Polska Kielbasa
- 1 apple, cut into small chunks
- 1/2 c. Dorothy Lynch Dressing & Condiment
- 2 tbsp. maple syrup

The Method
- Preheat oven to 425 degrees F.
- Lay Brussels sprouts face down on your largest baking sheet.
- You can use two baking sheets if necessary to ensure adequate space between individual sprouts. This will help make them crispier.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Cut ring bologna into ½-inch coins.
- Place ring bologna and apple on a separate baking sheet, and drizzle lightly with olive oil.
- Whisk Dorothy Lynch Dressing & Condiment with maple syrup. Set aside.
- Bake Brussels sprouts for 15-20 minutes.
- Place ring bologna and apple pan in oven during last 10 minutes of roasting.
