Tasty Cheesy Chicken with Bacon

Ingredients
  • 1 lb. boneless, skinless chicken breasts
  • 1 c. Dorothy Lynch
  • 1 c. shredded cheddar or colby jack cheese
  • 1/4 c. crumbled bacon bits (pre-cooked)
  • 1 Tbsp. olive or coconut oil
  • salt and pepper to taste
  • Prep time: 10 Minutes
  • Cook time: 25 Minutes
  • Serves: 4

The Method

  1. Start by browning the chicken slightly in the oil.
  2. You want to give it a good sear by cooking it over medium-high heat, or “saute” in a pressure cooker, for one minute on each side.
  3. Move the pieces around so that they all get a little browned.
  4. Season the chicken wit with salt and pepper, then cover with the Dorothy Lynch.
  5. If you are cooking in the pressure cooker, stir it around a bit, then cover.
  6. Seal the lid for pressure cooking, and cook on “high pressure” for 10 minutes. Allow to depressurize on its own.
  7. Check to ensure a 165 internal temp.
  8. If you are cooking in the oven, cook the chicken in a glass baking dish at 350 degrees for 15-20 minutes or until the internal temperature hits 165 degrees. Note that thicker pieces may take longer than thinner chicken breasts.
  9. To speed the cooking, you may choose to butterfly the breasts or cut in half.
  10. Once cooked, remove and sprinkle with cheese and bacon.
  11. Allow the cheese to melt, then serve with a side of veggies.
