Tasty Cheesy Chicken with Bacon

Ingredients
- 1 lb. boneless, skinless chicken breasts
- 1 c. Dorothy Lynch
- 1 c. shredded cheddar or colby jack cheese
- 1/4 c. crumbled bacon bits (pre-cooked)
- 1 Tbsp. olive or coconut oil
- salt and pepper to taste

The Method
- Start by browning the chicken slightly in the oil.
- You want to give it a good sear by cooking it over medium-high heat, or “saute” in a pressure cooker, for one minute on each side.
- Move the pieces around so that they all get a little browned.
- Season the chicken wit with salt and pepper, then cover with the Dorothy Lynch.
- If you are cooking in the pressure cooker, stir it around a bit, then cover.
- Seal the lid for pressure cooking, and cook on “high pressure” for 10 minutes. Allow to depressurize on its own.
- Check to ensure a 165 internal temp.
- If you are cooking in the oven, cook the chicken in a glass baking dish at 350 degrees for 15-20 minutes or until the internal temperature hits 165 degrees. Note that thicker pieces may take longer than thinner chicken breasts.
- To speed the cooking, you may choose to butterfly the breasts or cut in half.
- Once cooked, remove and sprinkle with cheese and bacon.
- Allow the cheese to melt, then serve with a side of veggies.
