Grilled Shrimp Skewers with Bacon

Ingredients
- 2 T. butter
- 1/2 c. onion, finely chopped
- 1 small jalapeno, seeded and chopped
- 1/2 tsp. cayenne pepper
- 1 c. Dorothy Lynch Home Style
- 1 (1ʺ) piece ginger, grated
- 16 (approximately 1 1/4 lbs.) colossal shrimp, shelled and deveined with tail on
- 4 slices bacon, cut in thirds
- 16 wooden skewers soaked in water
- Salt and pepper to taste

- Cook time: 10 Minutes

The Method
- In a medium saucepan, melt butter and sauté onions and jalapeño until tender.
- Add salt and pepper, cayenne, ginger and Dorothy Lynch.
- Let simmer until the edges begin to caramelize (about 10 min).
- Set aside and let cool.
- Once cool, remove half of the sauce and reserve for dipping.
- Put shrimp on skewer so that shrimp is straight and no longer curved.
- Wrap bacon around the center of each shrimp and brush with remaining sauce.
- Place skewers with bacon on the grill.
- Cook over medium heat until the bacon crisps and the shrimp is cooked through, about 8 min.
