Chinese Fruited Pork

Ingredients
  • 1 1/4 lbs. boneless pork cut in cubes
  • 2 T. soy sauce
  • 1/4 c. Dorothy Lynch Home Style
  • 4 tsp. cornstarch, divided 3 tsp + 1 tsp
  • 5 T. cooking oil, divided 4 T. + 1 T.
  • 1 (6-oz.) pkg. frozen pea pods, slightly thawed
  • 2 T. water
  • 1 (16-oz.) can apricot halves, drained, reserving syrup
  • Hot cooked rice
  • Prep time: 20 Minutes
  • Cook time: 10 Minutes
  • Serves: 6

The Method

  1. Place pork in a bowl.
  2. Combine soy sauce, dressing, and 3 tsp. Cornstarch.
  3. Pour over meat.
  4. Allow to marinate 15 min.
  5. Heat 4 T. oil in a large skillet.
  6. Drain pork, reserving marinade.
  7. Add pork to skillet and cook over high heat, stirring, about 4 to 5 minutes until meat is done.
  8. Remove meat and set aside.
  9. Drain skillet.
  10. Add remaining oil to the skillet.
  11. Add snow peas and stir-fry about 30 seconds.
  12. Stir in pork and apricots.
  13. Dissolve remaining cornstarch in reserved apricot syrup.
  14. Blend in reserved marinade.
  15. Add to skillet and heat, stirring until sauce thickens.
  16. Serve with rice.
