Creamy Linguine with Shrimp and Veggies

Ingredients
  • 6 qts. water
  • 1 tsp. salt
  • 8 oz. uncooked linguine
  • 3 c. broccoli florets
  • 1 1/2 T. butter
  • 1 c. onion, chopped
  • 8 oz. mushrooms, sliced
  • 2 garlic cloves, minced
  • 12 oz. medium shrimp, peeled and deveined
  • 1/2 c. Dorothy Lynch Home Style or Light & Lean
  • 1 carrot, cut julienne
  • 1/2 c. (1/2 block) low fat cream cheese, softened
  • 1/4 tsp. ground black pepper
  • Prep time: 15 Minutes
  • Cook time: 20 Minutes
  • Serves: 4

The Method

  1. Boil water.
  2. Add 1/2 tsp. salt and pasta.
  3. Cook for 5 min.
  4. Add broccoli and cook for 3 minutes or until pasta is almost done.
  5. Drain.
  6. Melt butter over medium-high heat.
  7. Add onion and mushrooms to the pan.
  8. Sauté for 5 minutes, stirring occasionally.
  9. Add garlic and sauté for 1 minute, stirring constantly.
  10. Add 1/2 tsp. salt, shrimp, and carrot, sauté 3 minutes.
  11. Mash the cream cheese and Dorothy Lynch together with a fork.
  12. Add pasta mixture, Dorothy Lynch, and cream cheese mixture and ground pepper to the pan of shrimp.
  13. Cook until the mixture is melted and mixed through, and the shrimp are cooked to a nice pink color.
