Ingredients
  • 1 lb. fresh cod
  • 1 tsp. cumin
  • 1 tsp. smoked paprika
  • 1 tsp. chili powder
  • ½ tsp. oregano
  • ½ tsp. garlic powder
  • 2 T. canola oil
  • ⅓ c. Dorothy Lynch Home Style Dressing & Condiment
  • 2 garlic cloves, minced
  • 1 c. chopped purple cabbage (optional topping)
  • 1 c. chopped green cabbage(optional topping)
  • ½ c. thawed frozen corn (optional topping)
  • ½ chopped green onion (optional topping)
  • Dorothy Lynch Dressing & Condiment to taste (optional topping)
  • Prep time: 15 Minutes
  • Cook time: 18 Minutes
  • Serves: 8

The Method

  1. Preheat oven to 350 degrees.
  2. In a bowl, mix chili powder, cumin, paprika, garlic powder, and oregano.
  3. Arrange the fresh cod on a lined baking sheet.
  4. Rub the spice mixture over the fish and drizzle with canola oil.
  5. Drizzle Dorothy Lynch Homestyle Dressing on top of the cod.
  6. Bake the cod in the oven for 13-18 minutes, depending on the thickness of your fish.
  7. Remove from the oven when it is cooked all the way through and looks flakey.
  8. Construct your taco. Place fish on a warm corn tortilla and top it with your desired toppings.
