Dorothy Lynch Spicy Peanut Chicken Stir Fry
Ingredients
  • 1 T. olive oil
  • 1 lb. boneless skinless chicken breasts, cut into strips
  • 3 cloves garlic, minced
  • 1 red pepper, cut into strips
  • 1 c. snow peas
  • 1 can sliced water chestnuts, drained
  • 1/2 c. Dorothy Lynch Home Style
  • 1/4 c. Thai peanut sauce
  • 1/4 to 1/2 tsp. crushed red pepper, depending on desired spiciness
  • 2 c. white rice, cooked
  • Prep time: 10 Minutes
  • Cook time: 20 Minutes
  • Serves: 4

The Method

  1. Heat oil in large nonstick skillet on medium-high heat.
  2. Add garlic, sauté until browned, add chicken and stir for 4 minutes until chicken is browned evenly.
  3. In a small bowl, whisk together Dorothy Lynch and Thai peanut sauce until evenly combined.
  4. Add pepper strips and snow peas, cook for 2-3 minutes or until chicken is done and vegetables are still slightly crisp.
  5. Add water chestnuts, Dorothy Lynch mixture and crushed red pepper.
  6. Cook for 2 minutes or until heated through.
  7. Serve over rice.
