Dorothy’s Taco Salad

Ingredients
  • 1 lb. ground beef
  • 1 pkg. taco seasoning
  • 1/2 lg. onion, chopped
  • 1/2 head lettuce, chopped
  • 1 lg. tomato, chopped
  • 1/2 to 1 can of ranch style beans, drained
  • 4 oz. Velveeta cheese and 1 can Rotel
  • 1/2 c. salsa
  • 1 c. shredded cheddar cheese
  • 1 to 2 jalapenos, chopped
  • 1/2 bag Frito Corn Chips
  • Dorothy Lynch, to taste
  • Prep time: 20 Minutes
  • Cook time: 15 Minutes
  • Serves: 6

The Method

  1. Brown ground beef and add taco seasoning.
  2. In a small pan, combine Velveeta cheese and Rotel, heat and stir till smooth.
  3. In a large bowl, add cooled browned beef, lettuce, onions, tomatoes, beans, Rotel cheese dip, salsa, shredded cheese, corn chips, and jalapeño.
  4. Toss all ingredients together.
  5. Top with my best friend, Dorothy Lynch!
  6. Enjoy the sweetness and spice of these flavors in this dish. It is so good you won’t be able to stop eating.

Note: I like to chop everything small so I can get a little of everything in every bite and eat it with a large spoon.
