Grilled Club Sandwiches

Ingredients
- 12 slices bread (cottage white works well)
- 1 stick room temperature butter
- 1/2 lb. sliced turkey breast
- 1/2 lb. sliced deli ham
- 4 slices Colby Jack cheese
- 8 slices bacon, cooked
- 2 tomatoes, thinly sliced
- 2 avocados, sliced
- 8 iceberg lettuce leaves
- 1/2 c. mayonnaise
- 1/2 c. Dorothy Lynch Dressing & Condiment

The Method
- Spread 4 slices of bread with butter on both sides.
- Grill in a frying pan over medium-high heat on both sides until bread is golden brown.
- Set aside to cool.
- Spread one side of the 8 remaining slices of bread with butter.
- Mix the mayonnaise and Dorothy Lynch Dressing & Condiment in a small mixing bowl.
To assemble sandwiches:
- Lay one slice of bread, butter side down.
- Spread generously with the sauce.
- Follow with a slice of cheese, tomato, turkey, toasted bread, ham, lettuce, avocado, more sauce, and bread.
Grill sandwiches:
- Heat a frying pan over medium-high heat.
- Cook the sandwich for about 2 minutes on each side, until the bread is toasted golden brown.
- Press down on the sandwiches with a spatula while cooking to pack them down.
- Remove from heat, cut in half (or in fourths), and secure each sandwich with a toothpick, if necessary, to hold the sandwich together.
