Grilled Shrimp Skewers with Bacon

Ingredients
  • 2 T. butter
  • 1/2 c. onion, finely chopped
  • 1 small jalapeno, seeded and chopped
  • 1/2 tsp. cayenne pepper
  • 1 c. Dorothy Lynch Home Style
  • 1 (1ʺ) piece ginger, grated
  • 16 (approximately 1 1/4 lbs.) colossal shrimp, shelled and deveined with tail on
  • 4 slices bacon, cut in thirds
  • 16 wooden skewers soaked in water
  • Salt and pepper to taste
  • Prep time: 15 Minutes
  • Cook time: 10 Minutes
  • Serves: 8

The Method

  1. In a medium saucepan, melt butter and sauté onions and jalapeño until tender.
  2. Add salt and pepper, cayenne, ginger and Dorothy Lynch.
  3. Let simmer until the edges begin to caramelize (about 10 min).
  4. Set aside and let cool.
  5. Once cool, remove half of the sauce and reserve for dipping.
  6. Put shrimp on skewer so that shrimp is straight and no longer curved.
  7. Wrap bacon around the center of each shrimp and brush with remaining sauce.
  8. Place skewers with bacon on the grill.
  9. Cook over medium heat until the bacon crisps and the shrimp is cooked through, about 8 min.
