- 2 lbs. total of beef, pork and lamb tenderloins
- Dorothy Lynch Home Style or Light & Lean
- Whole, mixed peppercorns, freshly ground
- Prep time: 4 Hours
- Cook time: 15 Minutes
- Serves: 6
The Method
- Slice tenderloins into 1/4″ thick medallions.
- Arrange in layers in an airtight container.
- Pour Dorothy Lynch Home Style or Light & Lean over each layer.
- Cover and marinate in the refrigerator for at least four hours.
- Remove marinated medallions from container, saving marinade for use in basting.
- Grill medallions as desired.
- Lightly baste with marinade as the meat cooks.
- Garnish with peppercorns.
